Epicurious.com is a repository for thousands of recipes that have made it into printed publications.  Simply search for the ingredients you wish to use, and this site will kick back suggestions that you can make for dinner for your family, or a whole dinner party!

From Mary S. “This recipe only took 45 minutes to prep and clean up.  Cook time is about three hours.  My husband and our daughter both loved it.  And it’s a much healthier take on lasagna.”

Grilled Vegetable Fajitas

From Bill S. “We borrowed from several recipes online and came up with our own version for grilling at the Farms park.  We sliced into strips:
2 green peppers
1 red pepper
1 white onion
1 zucchini
4 portobello mushrooms

and tossed them into a large zip-lock storage box with garlic pepper, a touch of garlic salt (yes, we like garlic!) and about 3-4 tbsp. of olive oil. and shook everything up to get the oil on all of the vegetables.   When we arrived at the Park, we lit the grill and got it to a good even fire and placed the veggies into tinfoil for grilling. Our friends had pork tenderloin and chicken to add to their fajitas.  I think it took about 20 minutes to grill everything – but the best bet is to go back every 5 minutes or so to make sure that the veggies are grilling to your liking.  You may want to roll the veggies inside the tinfoil to make sure that those on the top get rotated to the bottom for even cooking.
Once the veggies are cooked, spread a light amount of sour cream on the tortilla (we grilled these for about 3 minutes in tinfoil, to heat them up a bit), add grilled veggies and cheese and salt/pepper/lime juice to taste.  It’s a very simple and cost-effective dinner.  Feeds 4-6 people depending on what else there is to eat!”

2 green peppers
1 red pepper
1 white onion
1 zucchini
4 portobello mushrooms

Additional items:
Low-Fat Sour Cream
Shredded Cheese
Tortillas
Lime
Salt and Pepper (to taste)
